Wholemeal Banana Date Muffins



These wholemeal banana date muffins make a perfect breakfast for kids, and adults too. If you find it difficult for your kids to get the extra needed fiber in their diet - this is a pretty clever way. And what's special about this recipe is it uses minimal sugar. The sweetness in the muffins are derived from the dates and the over-ripe bananas.

These delicious wholesome banana date muffins are incredibly easy to make and takes only 10 minutes to prepare. If you are always on the go, you can always pre-mix a batch of muffin batter and refrigerate. And whenever your kids or you are "in need for a healthy, quick, snack", simply load up the muffin pan and bake for fresh, hot muffins!

Preparation time: 10 minutes
Bake time: 25 minutes

Comments:
This recipe uses wholemeal self-raising flour. If you find it hard to obtain wholemeal self-raising flour, you can make your own. The ratio is 2 teaspoons of baking powder to 1 cup of wholemeal flour. So, for this recipe, add 3 teaspoons of baking powder to 1 1/2 cups of wholemeal flour.

Ingredients:
3 ripe bananas, mashed
1 1/2 cups wholemeal self-raising flour
1/2 cup unsalted butter, melted
1 tablespoon brown sugar
2 tablespoons milk
2 eggs, beaten
1 cup pitted dates, finely chopped
1 teaspoon vanilla essence

Directions:
1. Preheat oven to 400ºF/200ºC.
2. In a large bowl, combine flour, sugar, salt, and mix.
3. In a separate bowl, combine bananas, egg, butter, milk, vanilla, and mix.
4. Add dry ingredients to wet ingredients, and stir until just combined. Be careful not to overmix (over mixing the batter will yield tough, rubbery muffin).
5. Stir in dates.
6. Spoon batter into paper muffin cups about 2/3 cups full.
7. Bake for about 20 minutes, or until a wooden pick comes out clean.
8. Allow to cool before removing from muffin pan.
