Banana Dumplings with Coconut Filling
This simple traditional banana dumplings with coconut filling is one of the most common desserts found in the local East Asian night markets.
A simple, sticky dessert wrapped in banana leaves, these dumplings are popular because its sweet, moist texture.
Made with bananas, grated coconut, coconut milk, glutinous rice flour and sugar, these banana dumplings are extremely easy to prepare.

Serves: 16 dumplings
Preparation time: 15 minutes
Steam time: 10 minutes
If the dough appears too dry, add some water, 1 tablespoon at a time. There is no special way of wrapping the dumplings in banana leaves – just ensure the dough is well wrapped to prevent "leakage".
Ingredients for Filling:
2 2/3 cups grated coconut
1/2 cup sugar
1 tablespoon plain flour
Ingredients for Dough:
3 ripe bananas (2/3 cups), mashed
2 cups glutinous rice flour
2/3 cup thick coconut milk
1/2 teaspoon salt
Banana leaves, for wrapping
1. Place all ingredients for filling into a pan and stir-fry for approximately 5 minutes until well mixed. Dish up and set aside to cool.
2. To make the dough, place bananas and coconut milk into a saucepan and cook over medium heat until it starts to boil. Turn off heat.
3. Add in flour and salt to the mixture, and mix until mixture is well combined and thick.
4. Knead mixture and divide into 16 portions. Place filling into dough and wrap like an envelope.
5. Place finished dough onto banana leaves and wrap neatly.
6. Steam at high heat for 10 minutes or until cooked. Serve warm or cool.

Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
