Banana Dumplings with Coconut Filling



This simple traditional banana dumplings with coconut filling is one of the most common desserts found in the local East Asian night markets. A simple, sticky dessert wrapped in banana leaves, these dumplings are popular because its sweet, moist texture.

Made with bananas, grated coconut, coconut milk, glutinous rice flour and sugar, these banana dumplings are extremely easy to prepare. Try it and let me know whether to this recipe brings back memories of your favorite local street desserts!

Serves:16 dumplings
Preparation time: 15 minutes
Steam time: 10 minutes

Comments:
If the dough appears too dry, just add some water. There are no special ways of wrapping the dumplings in banana leaves – just wrap it in any style you like.

Ingredients for Filling:
2 2/3 cups grated coconut
1/2 cup sugar
1 tablespoon plain flour

Ingredients for Dough:
3 ripe bananas (2/3 cups), mashed
2 cups glutinous rice flour
2/3 cup thick coconut milk
1/2 teaspoon salt
Banana leaves, for wrapping

Directions:
1. Place all ingredients for filling into a pan and stir-fry for approximately 5 minutes until well mixed. Dish up and set aside to cool.
2. To make the dough, place bananas and coconut milk into a saucepan and cook over medium heat until it starts to boil. Turn off heat.
3. Add in flour and salt to the mixture, and mix until mixture is well combined and thick.
4. Knead mixture and divide into 16 portions. Place filling into dough and wrap like an envelope.
5. Place finished dough onto banana leaves and wrap neatly.
6. Steam at high heat for 10 minutes or until cooked. Serve warm or cool.
