Old-Fashioned Banana Fritters Recipe





There are so many variations to the banana fritters recipe. And I must say my favourite are those banana fritters that are packed with bananas, not overly sweet with a rich texture.

Commonly known as Jemput Jemput or Kuih Kodok/Cokodok to local Malaysians and Indonesians, this recipe is easy to prepare and makes a great teatime snack (though I must it can be quite greasy).

A few notes about this recipe. It tastes best when using a type of banana known as “pisang raja” (or King of Bananas) because it gives a firmer texture and sweeter taste to the fritters. However, if you can’t obtain “pisang raja”, any ripe bananas suitable for frying will also taste great.

Servings: 15 fritters
Preparation time: 5 minutes
Cook time: 15 minutes

Comments:
You can reduce the flour for a softer texture.

Ingredients:
6 large ripe bananas, mashed
1¼ cups all-purpose flour
1 teaspoon baking powder
3 tablespoons sugar
Pinch of salt

Directions:
1. Sieve together flour, baking powder and salt.
2. In a separate bowl, combine mashed bananas and sugar.
3. Gradually combine flour mixture into mashed bananas, stirring well to form a sloppy batter.
4. Heat oil in pan or wok over medium flame.
5. Using a tablespoon, drop spoonfuls of batter into hot oil.
6. Fry till fritters are golden brown. Drain on paper towels.
