Applesauce Banana Macadamia Nut Muffins





Moist and crunchy, this banana macadamia nut muffins recipe is extremely flavorful, healthy and wholesome. This quick bread muffin recipe uses apple sauce instead of oil or butter and honey instead of sugar. It contains many ingredients that gives you the “feel good, mood boosting” feeling to start your day. So easy to make, it takes only 15 minutes to prepare.

Servings: 15 muffins
Preparation time: 15 minutes
Bake time: 30 minutes

Comments:
You can replace macadamia nuts with pecans or walnuts. Or, you can opt to fold in half of the chopped nuts into the batter, and sprinkle the remaining nuts on top of the muffins before baking.

Ingredients:
2 cups whole-wheat pastry flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup honey
1/2 cup milk
2 large, ripe bananas, mashed
1/2 cup macadamia nuts, roughly chopped
1/3 cup or 75g apple sauce (available in grocery stores; or you can even use the baby food version)

Directions:
1. Preheat oven to 350ºF/180ºC.
2. In a large bowl, combine flour, baking powder and salt.
3. In a separate bowl, combine apple sauce, honey, milk, bananas, and mix.
4. Add dry ingredients to wet ingredients, be careful not to overmix.
5. Stir in nuts.
6. Spoon batter into paper muffin cups about 2/3 cups full.
7. Bake for about 30 minutes, or until a wooden pick comes out clean.
8. Allow to cool before removing from muffin pan.

Great recipe, easy and I can't believe there's no butter or oil. I made them without patty pans, just in a greased muffin tray and they popped straight outwhen cooked. Maybe you could let people know in case they opt out because they can't find the patty pans! Also used normal self raising flour, turned out fine. Thanks! - Alex Edelman, Australia
