Wholemeal Banana Peanut Butter Bread with Honey
Made with wholemeal flour, brown sugar, honey and peanut butter, this healthy, moist banana peanut butter bread is full of peanut butter and banana flavor. The addition of peanut butter brings a rich nutty flavor, plus the protein power of peanut butter. Serve with a little jelly/jam for a great family breakfast.This quick bread recipe does not require the use of an electric mixer. You can use a mixing bowl and a wooden spoon to combine and mix the ingredients. However, melt the butter first to ease mixing. Servings: 1 loaf Preparation time: 15 minutes Bake time: 1 hour Comments: This recipe uses wholemeal self-raising flour. If you find it hard to obtain wholemeal self-raising flour, you can make your own. The ratio is 2 teaspoons of baking powder to 1 cup of wholemeal flour. So, for this recipe, add 3 teaspoons of baking powder to 1 1/2 cups of wholemeal flour. Ingredients: 3 ripe bananas, mashed 1 1/2 cups wholemeal self-raising flour 1/2 cup butter, melted 2/3 cup brown sugar 2 eggs, beaten 1 teaspoon baking soda 1/2 cup crunchy/creamy peanut butter 1/4 cup honey Pinch of salt Directions: 1. Preheat oven to 350ºF/180ºC. 2. In a mixing bowl, combine mashed bananas with butter. 3. Add in eggs, vanilla, honey and peanut butter, and mix. 4. Add in sugar, baking soda, salt, and mix. 5. Add in flour last, and mix until just combined. 6. Pour mixture into a greased and floured bread loaf pan. 7. Bake for 1 hour or until a wooden pick comes out clean. 8.
