Easy Holiday Banana Spice Muffins with Mixed Fruits
These tasty banana spice muffins brings back the flavors of the holiday. Delicately spiced and filled with sweet dried fruits and bananas, these muffins make a simple, wonderful holiday treat. And the best part it that it takes only 10 minutes to prepare. If you are making muffins as gifts (healthy, delicious and cheap!), you can pre-mix batches of muffin batter and refrigerate or freeze. You can keep refrigerated pre-mix batter for 3 days or frozen batter for 1 month. And whenever you are ready to "gift or celebrate", simply load up the muffin pan and bake for fresh, hot spice muffins! Happy Holidays!
Servings: 12 muffins Preparation time: 10 minutes Bake time: 20 minutes Comments: You can replace buttermilk with sour cream or by souring 1 cup of milk with 1 tablespoon lemon juice. Ingredients: 3 very ripe bananas, mashed 2 cups self-raising flour 1/3 cup vegetable oil 1/2 cup brown sugar 1/3 cup buttermilk 3 eggs, beaten 1 cup mixed dried fruit, finely chopped 2 teaspoons mixed spice Directions: 1. Preheat oven to 400ºF/200ºC. 2. In a large bowl, combine flour, sugar, mixed spice and mix. 3. In a separate bowl, combine bananas, eggs, buttermilk, and mix. 4. Add dry ingredients to wet ingredients, and stir until just combined. Be careful not to overmix (over mixing the batter will yield tough, rubbery muffin). 5. Stir in dried fruits. 6. Spoon batter into paper muffin cups about 2/3 cups full. 7. Bake for about 20 minutes, or until a wooden pick comes out clean. 8. Allow to cool before removing from muffin pan. P.S. Easy Banana Bread
Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it
for half the time, too! It was so delicious!

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
