Vegetarian Chocolate Banana Fudge Pudding
If you like soft-textured desserts with the fat, then this light vegetarian chocolate banana fudge pudding recipe is one great way to indulge. It's a recipe from our contributing reader, Jojo.
Easy to make, this pudding is almost sponge like, and can get a little messy when eaten because of its texture.
Unlike classic chocolate puddings which uses chocolate sauce, this chocolate banana fudge pudding recipe uses cocoa powder to reveal a chocolate sauce at the bottom of the dish. Yummy!
Preparation time: 10 minutes
Bake time: 40 minutes
You can add 2 tablespoons of rum to the mixture for a slightly alcoholic taste, or 2 tablespoons of orange juice for a nice tangy twist.
1/3 cup all-purpose flour
4 tablespoons margarine
6 tablespoons brown sugar
1 1/2 cups milk
1 small over-ripe banana, mashed
1/3 cup chopped walnuts or pecans
2 tablespoons cocoa powder
Icing sugar and cocoa powder, optional, for dusting
1. Preheat oven to 350ºF/180ºC. Lightly grease an ovenproof dish/casserole.
2. With an electric mixer, cream butter and sugar until fluffy. Beat in eggs.
3. Slowly stir milk and bananas into the mixture.
4. Fold in cocoa and flour, and mix until well combined.
5. Lastly, stir in walnuts.
5. Pour mixture into prepared dish.
6. Bake for 40 minutes. Allow to cool.
7. Lightly sift with combined equal quantities of icing sugar and cocoa powder, if desired.

Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
