Lime Banana Coconut Loaf

This coconut lime banana loaf is another family quick bread favorite.

I started experimenting with this recipe a year ago upon the request of a reader (mom of 2) who wanted a combination of coconut and lime in her banana loaf. She once tried the combination on a road trip to Bali.

Based on the classic moist banana bread recipe, I included a generous amount of flaked coconut (you can also you grated or dessicated coconut) to bring out the rich coconut banana flavor, and enough lime zest, lime juice and almond essence to accentuate and add a hint of tanginess to the rich tropical combination.

The result, a flavorful, moist and refreshing coconut lime banana bread, with a rich coconut aroma.

Banana Coconut Lime Loaf Drizzle the cooled loaf with a generous amount of lime glaze for a gorgeous yet subtle sweet sour finish.

Servings: 1 loaf
Preparation time: 15 minutes
Bake time: 1 hour

You can also add 1/2 a cup of canned or fresh pineapple to the mixture for a richer tropical combination.

Ingredients for Loaf
3 over-ripe medium (1 cup) bananas, mashed
2/3 cup flaked/grated/dessicated coconut
1 1/2 cups all-purpose flour
1/4 cup butter, melted
1/4 cup sour cream (or plain yogurt)
3/4 cup caster sugar
2 eggs, beaten
1 teaspoon baking soda
1 tablespoon lime rind, grated
1 tablespoon lime juice, grated
1/2 teaspoon almond essence
1/4 teaspoon salt

Directions for Loaf
1. Preheat oven to 350ºF/180ºC.
2. In a mixing bowl, combine mashed bananas, butter, eggs, almond essence, lime rind, lime juice and mix.
3. Add in sugar, baking soda, salt, and mix.
4. Add flour last, and mix until just combined.
5. Stir in coconut.
6. Pour mixture into a greased and floured baking pan.
7. Bake for 1 hour (check for doneness at 50 minutes) or until a wooden pick comes out clean.
8. Allow to cool before removing from pan.

Ingredients for Lime Glaze
1/2 cup icing sugar
2 tablespoon lime juice
1 teaspoon lime rind, grated

Directions for Lime Glaze
Combine sugar, rind and juice in a bowl to make a spreadable consistency and spread over cooled loaf.

    Easy Banana Bread
    Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it for half the time, too! It was so delicious!

    Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

    Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
