Easy Banana Bread Recipe – Prepared in 15 minutes!
This easy banana bread recipe comes from Ama. Whenever we have leftover bananas, she would simply mash them up and whip-up a few banana breads. When I was younger, my job was to help wash the kitchen utensils and distribute the banana bread to neighbors, before I could eat the bread. The funny thing was we used to get fresh bananas in return!
Ama's banana bread recipe is so easy, it takes only minutes to prepare (and you don’t need to use a mixer). It’s so simple even your kids can help mash the bananas and mix the ingredients. The banana bread you’ll get is moist and rich with banana flavor.You can also get creative by adding half a cup of chocolate chips, grated coconut, nuts, raisins, dates or anything else you want to add to the mixture. The only thing you have to remember is to add them last, just before pouring the mixture into the pan. Another thing about banana breads are they are easy to store. What you need to do is to keep them tightly wrapped in plastic or foil and freeze them (they can last up to 2 months). When ready to eat, just thaw the bread in the refrigerator while still wrapped. Easy Banana Bread Recipe (without using a mixer) Servings: 1 loaf Preparation time: 15 minutes Bake time: 1 hour Comments: You can also add a little orange, lemon or lime juice for a nice tangy flavor, or ground cinnamon and nutmeg for a spicy twist. Ingredients 4 ripe bananas, mashed 1 1/2 cups all-purpose flour 1/2 cup butter, melted 3/4 cup castor sugar 2 eggs, beaten 1 teaspoon baking soda 1 teaspoon vanilla Pinch of salt Directions 1. Preheat oven to 350ºF/180ºC. 2. In a mixing bowl, combine mashed bananas with butter. 3. Add in eggs and vanilla, and mix. 4. Add in sugar, baking soda and salt, and mix. 5. Add flour last and mix well. 6. Pour mixture into a greased and floured bread loaf pan. 7. Bake for 1 hour or until a wooden pick comes out clean. 8. Allow to cool before removing from pan.

For this recipe (which does need the use of an electric mixer), I prefer using melted butter because it is much easier to mix. - Dorena

The kids love it for school and it's also come in handy as a quick recipe for when a couple of friends dropped by for coffee.
