Easy Banana Pudding, Made From Scratch
If you have a thing for creamy, simple pudding, then this easy banana pudding recipe will not disappoint. Perfected by my ex-dormmate Shirley, her quick and easy, and not overly sweet banana pudding was always a favorite at gatherings. What was interesting about this dessert is that you can choose to serve it in a bowl, wine glass or casserole dish, depending on your fancy. Made from simple ingredients including flour, eggs, sugar, milk, bananas and cookies, this pudding recipe does not involve any baking process. So, if you’re scrambling to whip up a quick dessert for any occasion, this dessert would be great. Serves:6 Preparation time: 20 minutes Comments When stirring the custard, make sure you reach the bottom, sides and corners of the saucepan to prevent custard from sticking and scorching.
Ingredients 2 cups milk 3 eggs yolks, beaten 2 tablespoons butter, softened 2/3 cup sugar 1/3 cup all-purpose flour or 3 tablespoons cornflour 1/8 teaspoon salt 1 teaspoon vanilla essence 1 box (12 ounce) of vanilla wafer cookies 5 bananas, sliced thinly Whipped cream, optional, for serving Directions 1. In a saucepan, combine sugar, flour and salt. Gradually stir in milk, a little at a time to make sure the flour is dissolved. Add in eggs. 2. Cook over medium to low heat, stirring constantly for about 10 minutes, or until mixture thickens and becomes custard like. Remove from heat. 3. Stir in butter and vanilla. Set aside to cool. 4. Using a casserole dish/glass bowl, arrange a layer of cookies followed by a layer of bananas. 5. Pour half the custard over the cookie and banana layer, making sure the custard covers the bananas to prevent discoloration. 6. Arrange another layer of cookies and bananas, and cover with the remaining custard. 7. Allow to cool for approximately 15-30 minutes before refrigerating for at least 1 hour.
