Quick & Easy Banana Scones
This easy banana scones recipe has been with me for many years now. I first learned to make these simple scones when I was in Brighton visiting my friend, Gloria who was studying there.
She often made me scones in her small little student pantry (as we couldn't afford to eat out :-)) for my breakfast and snack, before she went off for her classes.
Crisp on the outside, with a rich buttery flavor and hint of banana flavor in the inside, her scones were lovely eaten warm with jam, butter and clotted cream.
Being such a "versatile" recipe, you can get creative by adding half a cup of chocolate chips, grated coconut, nuts, raisins, dates or anything else you want to add to the mixture for a wonderful, filling treat.
However, when using certain fruits that are more moist, you may need to use more flour to add to the mixture.
Easy Banana Scones
Servings: 12 scones
Preparation time: 15 minutes
Bake time: 20 minutes
The most important thing to remember when making scones is that too much mixing, kneading, and baking will produce dry and tough scones.
2 1/2 cups self-raising flour, plus 1/2 cup more for kneading
7 tablespoons cold butter, cut into pieces
1/3 cup brown sugar, firmly packed
1/2 cup milk, plus more for brushing tops
2 medium (2/3 cup) over-ripe bananas, mashed
1 teaspoon vanilla essence
1. Preheat oven to 400ºF/200ºC. Lightly grease a flat baking tray.
2. In a mixing bowl, mix together flour and sugar.
3. Using your fingertips, rub butter into flour until mixture resembles breadcrumbs.
4. Add bananas, vanilla and milk. Mix lightly with a fork until mixture forms a soft, sticky dough. Add in more milk or flour (about a tablespoon at a time) if required.
5. Turn dough onto a lightly floured surface. Knead gently until smooth (avoid kneading dough too much or scones will be tough).
6. Pat dough into 2cm thick round. Using a 5cm (diameter) round cutter, cut out 12 rounds.
7. Place scones onto prepared baking tray, 1 cm apart. Brush tops with milk.
8. Bake for about 17-20 minutes or until golden brown.
9. Allow to cool. Serve warm with jam and cream, or butter.

Easy Banana Bread
Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
