No Fuss Easy Chocolate Banana Cake

Here's a great cake recipe for everyone. Dark, rich, moist and not-too-sweet, this easy chocolate banana cake is really good as a dessert.

I've had this recipe for a long, long time and I am not sure whether it is from my aunt or my mum...hmmm. Both claim it's their recipe.

The addition of bananas in this chocolate cake sweetens the cake and makes the cake extra moist and flavorful. Made with simple ingredients including flour, cocoa powder, bananas, oil, eggs and milk - this recipe takes only 15 minutes to prepare. Use very ripe bananas for this recipe for a moist and sweet chocolate banana cake.

This recipe is very easy, even your kids can help out. For a tempting finish, cover the cake with hot chocolate glace or dust with icing sugar. Enjoy!

Servings: 21cm Bundt cake
Preparation time: 15 minutes
Bake time: 35-40 minutes

Comments:
You can add in 1/2 a cup of chocolate chips or chopped nuts if desired. Stir in last.

1 3/4 cups all-purpose flour
1 1/2 cups castor sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 ripe bananas or 1 cup bananas, mashed
2 eggs, beaten
1/2 cup vegetable oil
1/2 cup milk
1 cup water
1 teaspoon vanilla

Directions for Cake:
1. Preheat oven to 350ºF/180ºC.
2. In a mixing bowl, whisk flour, sugar, cocoa, baking powder, baking soda and salt.
3. In a separate bowl, whisk bananas, eggs, oil, milk, water and vanilla.
4. Add wet to dry and stir until just combined.
5. Pour batter into a greased and floured cake pan.
6. Bake for 35-40 minutes or until a wooden pick comes out clean.
7. Allow to cool before removing from pan. Finish cooled cake with chocolate glaze topping if desired.

Ingredients for Topping:
3/4 cup semi-sweet chocolate chips/chocolate pieces
3 tablespoons unsalted butter, softened
1 tablespoon light corn syrup

Directions for Topping:
1. In a double boiler over hot (but not boiling water), combine chocolate chips, butter and corn syrup. Stir until melted.
2. Spread warm glaze over top of cake, letting it drizzle down the sides.

Even though I forgot the eggs, it was still so delicious and it wasn't to sweet! All you busy banana and chocolate lovers will love it cause it's easy, quick, and tastes great! - Amp, U.States

Hi, I made it twice..1st time it was very moist and dense. Then I made it today and added dessicated coconut and it turned out perfectly moist but not heavy or dense. It has great texture and just perfect with a cuppa. Thanx for the recipe. I'm going to try it with the coconut. Again, cherries instead of banana or a mix of both! - Di, Australia

Continued from Karen on her next email...Thanks Karen :-), LOL, Dorena.

Thought I'd share this additional - my sister is also vegan (for 16 yrs now) and it was her 16yr old daughter who just went vegan who I made this for. Sis is also queen of vegan sweet delights and has developed at least 30 or 40 sweet recipes of her own but was moving house so couldn't do the honours this time...anyway, she swears this was the best vegan cake she's ever eaten and I'd have to agree (I've eaten a few in my time!). Thanks again, I've been sharing this recipe with all my friends! - Karen, Australia

    Easy Banana Bread
Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it for half the time, too! It was so delicious!

But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.

This might be my new favorite recipe! Plain, they are like mini, takealong banana bread bites! Delicious! Then I got creative, and dipped them in semisweet chocolate, then pressed a walnut on top and now they are an elegant cookie! I wowed my friends at our cookie exchange this year, but little did they know how simple it was! Thank you for the best kept secret I'll ever have in my kitchen!
