Getok Pisang (Steamed Banana Cake)
This steamed banana recipe or getok pisang is a traditional favorite dessert among Indonesians, Malaysians and Thais. Made with semi-ripe bananas (suitable for cooking/frying), sugar and grated coconut, this simple recipe needs only 5 minutes to prepare. The result is a deliciously dense, moist, puddingy sweet dessert with a sourish undertone. Serves: 6 Preparation time: 5 minutes Steam time: 30 minutes Comments: If you cannot obtain freshly grated coconut, you can replace with unsweetened dessicated coconut. Soak the dessicated coconut in water for approximately 10 minutes before use. Ingredients: 15 medium size, semi-ripe bananas (eg. pisang nangka, pisang abu, pisang raja, etc) 1 cup grated coconut (1/2 cup for mixture, and 1/2 cup for topping) 1/3 cup castor sugar 1 teaspoon salt Directions: 1. Skin bananas and steam in high heat for 30 minutes or until soft. Mash bananas. 2. Add sugar, coconut and salt. Mix until thoroughly combined. 3. Flatten mixture to approximately 3cm thick and cut into small squares. 4. Sprinkle grated coconut on top and serve warm or cold. P.S.
