Melt & Mix Steamed Chocolate Banana Cake with Mixed Fruits

My 7 year old daughter decided to make me a Mother's Day cake, and asked if we could make a chocolate cake with pretty fondant together...yeah! She was inspired by what she saw at her friend, Linus birthday party.

The first thing that came to my mind is my aunt's moist melt and mix steamed chocolate banana cake. This recipe is extremely quick and easy to make, delicious and great for the little ones to get involved because it takes only 10 minutes to prepare.

Being as Asian, I somehow prefer the steamed version of the chocolate banana cake because it's lighter and more fluffy than baked cakes, without compromising the rich chocolate taste and light banana flavor. I also like adding dried mixed fruits like raisins, cranberries and orange peel to the cake as it gives more bites of sweetness to the cake. If you are a coffee lover, add 1 teaspoon to the mixture.

This moist cake is delicious eaten on its own, served with ice-cream or glazed with chocolate sauce. It's also great as a base to make a chocolate fondant cake. Here is Rui's first steamed chocolate banana cake with fondant...:-)

Note: You can replace mashed bananas with various types of vegetable and fruit purees such as carrots, mangoes or steamed yam to the batter. Rule of thumb, for thicker purees, add some water to make the consistency somewhat close to mashed bananas. For thinner purees, just reduce the quantity used to about 3/4 cup instead of 1 cup. Of course, bananas are still my preferred choice as they give an intense flavor and aroma to the cake.

Serves: 4
Preparation time: 10 minutes
Steam time: 45 minutes

Do not open lid of the steamer halfway through steaming to prevent cake from sinking.

1 1/4 cups all-purpose flour, sifted
3/4 cup unsweetened cocoa powder
1 cup caster sugar
3/4 cup vegetable oil
1/2 cup evaporated milk (or plain milk)
3 eggs, beaten
3 medium over-ripe (1 cup) bananas, mashed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla essence
1/4 cup mixed fruits, chopped (optional)
1 teaspoon instant coffee powder (optional)

1. Preheat steamer over high heat.
2. Combine cocoa, sugar, oil and milk in a saucepan. Stir over low heat; without boiling until sugar is melted and cocoa is dissolved. Remove from heat and allow to cool.
3. Add in eggs, bananas, mixed fruits, vanilla, and mix until well combined.
4. Add in flour, baking soda and baking powder, stirring until well combined.
5. Pour batter into a greased cake pan and steam for approximately 45 minutes or until a wooden pick comes out clean.
6. Remove cake immediately from steamer and allow to cool before serving.

    Easy Banana Bread
    Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it for half the time, too! It was so delicious!

    Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real".     Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
