Quick Vegan Banana Nut Muffins





I've recently been asked to make some vegan banana nut muffins for a charity sale. And I decided to make a healthy vegan version based on my well-known easy banana bread recipe.

For this recipe, I used soy milk added with apple cider vinegar as a substitute to buttermilk for added moisture, whilst always using as many over-ripe bananas as I can get hold off.

The result - the most dense, flavorful and moist vegan banana muffins with crunchy nuts...yum. You can also add chocolate chips, dried fruits or any other dried ingredients you like to the mixture.

These versatile vegan banana nut muffins are incredibly easy to make and takes only 10 minutes to prepare. If you are always on the go, you can always pre-mix a batch of muffin batter and refrigerate. And whenever you are "in need for a healthy, quick, snack", simply load up the muffin pan and bake for fresh, hot muffins!

Servings: 15 muffins
Preparation time: 10 minutes
Bake time: 20 minutes

Comments:
You can opt to fold in half of the chopped nuts into the batter, and sprinkle the remaining nuts on top of the muffins before baking.

Ingredients:
4 medium over-ripe (1 1/3 cup) bananas, mashed
2 cups all-purpose flour
1 cup brown sugar, firmly packed
1/2 cup vegetable oil
1/4 cup soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon cinnamon powder
1 tablespoon baking soda
1 teaspoon vanilla essence
1/2 teaspoon salt
1/2 cup nuts, roughly chopped

Directions:
1. Preheat oven to 400ºF/200ºC.
2. In a large bowl, combine flour, sugar, baking powder,cinnamon powder, salt, and mix.
3. In a separate bowl, combine bananas, oil, soy milk, vanilla, and mix.
4. Add dry ingredients to wet ingredients, be careful not to overmix.
5. Stir in nuts.
6. Spoon batter into paper muffin cups about 2/3 cups full.
7. Bake for about 20 minutes, or until a wooden pick comes out clean.
8. Allow to cool before removing from muffin pan.

    Easy Banana Bread
    Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it for half the time, too! It was so delicious!

    Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

    Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
