Indulging Vietnamese Banana Cake
(Banh Chuoi Nuong) with Coconut
There are many variations to the delicious Vietnamese Banana Cake. Traditionally made with coconut milk, this version from Luke Nguyen's Song of Sapa uses sweetened condensed milk instead, which is just as delicious and not as overly sweet as you would expect.
However, I have added some freshly grated coconut (dessicated coconut works well too) to the recipe to bring a hint of coconut aroma and richer flavor to the cake.
More like a bread pudding in texture rather than a cake, this traditional Vietnamese banana cake is dense, flavorful and aromatic. When you eat this, you can really taste and smell of sweet bananas in it.
The process to make this cake is very simple yet and you can't really go wrong with it. In fact, you can get creative by adding dried fruit and nuts to the mixture.
Note: When I was travelling to Indonesia, I noticed that the Indonesians had a similiar version to this baked banana cake too which really makes this cake a truly classic Asian dessert.
Servings: 20cm round cake
Preparation time: 15 minutes
Bake time: 1 hour
You can use any type of bananas, as long as they are firm and fairly ripe.
5 medium size bananas, sliced thinly
1 1/3 cups all-purpose flour
1/4 caster sugar
1 cup butter, melted
1 1/4 cup sweetened condensed milk
7 eggs, beaten
1/2 cup grated coconut (optional)
1. Preheat oven to 4000ºF/200ºC.
2. In a bowl, combine bananas with sugar and set aside.
3. In a mixing bowl, combine eggs, condensed milk, butter, and mix. Add in flour and mix well.
4. Gently fold in bananas and coconut to the mixture.
6. Pour mixture into a greased and floured pan.
7. Bake for 1 hour until golden brown, or until a wooden pick comes out clean.
8. Allow to cool before removing from pan. Serve warm or cold.

Easy Banana Bread
Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". But I tried this recipe and trust me, I have NO regrets! awesome!!!! If you don't have baking soda, like I did, use two teaspoons of baking powder

Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
