Quick & Easy Wholemeal Corn Flakes Banana Muffins
This is an easy idea for some healthy wholemeal corn flakes banana muffins if you have extra cornflakes to use up (or corn flakes that have gone soft).
It makes a great high-fiber snack for family. This recipe is very easy to make and takes just 10 minutes to prepare. If you are always on the go, you can always pre-mix a batch of muffin batter and refrigerate. And whenever you are "in need for a healthy, quick, snack", simply load up the muffin pan and bake for fresh, hot muffins!
Servings: 12 muffins
Preparation time: 10 minutes
Bake time: 20 minutes
This recipe uses wholemeal self-raising flour. If you find it hard to obtain wholemeal self-raising flour, you can make your own or simply use self-raising flour. The ratio to make wholemeal self-raising flour is 2 teaspoons of baking powder to 1 cup of wholemeal flour.
1 cup wholemeal self-raising flour
1 1/4 cups corn flakes cereal, slightly crushed
1/2 teaspoon baking soda
1/2 cup sugar
1/4 cup butter, melted
3 medium over-ripe (1 cup) bananas, mashed
2 eggs, beaten
1 teaspoon cinnamon
Pinch of salt
1/2 cup raisins (optional)
1. Preheat oven to 375ºF/190ºC.
2. In a large bowl, combine flour, sugar, salt, and mix.
3. In a separate bowl, combine bananas, eggs, butter, vanilla, and mix.
4. Add dry ingredients to wet ingredients, and stir until just combined. Be careful not to overmix (over mixing the batter will yield tough, rubbery muffin).
5. Stir in cornflakes and raisins.
6. Spoon batter into paper muffin cups about 2/3 cups full. Sprinkle some cornflakes on the mixture.
7. Bake for about 20 minutes, or until a wooden pick comes out clean.
8. Allow to cool before removing from muffin pan.

Easy Banana Bread
Great recipe! I had two ripe bananas at home and wanted to use them right away, so I searched for ideas on the Internet. I found this recipe and decided to give it a try. Since I only had two bananas, I used only half of every ingredient (I added a dash of cinnamon) and baked it

Lovely site I must say! when i found this recipe I thought "this is too good to be true", when I saw the comments I was like "yeah right, these are so not real". Excellent! This would have to be the most delicious and moist banana cake ever! I used wholemeal flour instead and it was still unbelievably moist. Also, I baked it for 50 mins instead, then left to cool and that helped make it more moist yet not undercooked. This has now become a firm family favourite, thankyou!.
